Acrescente o arroz cozido e mexa para se agregar. Desligue.  &lt;br /&gt;Modo de preparar: &lt;br /&gt;Em uma tigela, coloque o açúcar mascavo, o chocolate, 1/2 xícara (chá) de farinha de trigo, a margarina e misture bem ate formar uma farofa. Reserve. Bata as claras em ponto de neve, acrescente as gemas, o açúcar, a água, 2 xícaras (chá) de farinha  de trigo, o fermento e a essência de baunilha. Divida a massa em 3 partes iguais. Coloque uma parte da massa em uma forma de buraco no meio untada e enfarinhada. Cubra com metade da mistura de chocolate reservada e outra parte da massa de baunilha. Misture o café solúvel ao restante da mistura de chocolate e despeje na forma. Cubra com o restante da massa de baunilha. Leve para assar em forno médio, preaquecido, por cerca de 45 minutos ou ate que ao enfiar um palito, ele saia limpo. &lt;br /&gt;Dica: Se o açúcar mascavo estiver empedrado, coloque uma fatia de pão fresco dentro do pote onde ele fica guardado. Deixe amornar e modele as coxinhas e recheie-as.&lt;br /&gt;&lt;br /&gt;Recheio:&lt;br /&gt;&lt;br /&gt;•1 kilo de peito de frango cozido com água e temperos e desfiado, bem miúdo.&lt;br /&gt;•2 colheres de sopa de óleo ou azeite&lt;br /&gt;•1 cebola picada&lt;br /&gt;•3 dentes de alho amassados&lt;br /&gt;•2 tomates sem pele e sem sementes, picados&lt;br /&gt;•1 pitada de pimenta do reino&lt;br /&gt;•1 xícara de chá de caldo de frango&lt;br /&gt;•3 colheres de sopa de salsinha picada.&lt;br /&gt;Modo de preparo:&lt;br /&gt;&lt;br /&gt;Refogue a cebola e o alho no azeite. Adicione os demais ingredientes, menos a salsinha. Deixe refogar bem. Quando estiver sequinho, coloque a salsinha e mexa. Deixe esfriar e use como recheio. Empane as coxinhas, passando-as na clara de ovo e na farinha de rosca.
